The Kaffir Lime leaf has very fragrant (when crushed or chopped) double leaf. This is the lime preferred for Thai cooking has leaves with a serrated edge (not smooth) and the new growth is dark purple. Fresh young green leaves are best in cooking.

The tree will produce a crinkly “alien” looking fruit, the zest of the fruit is extraordinarily flavoursome, and can be used to bring a exquisite limey flavour to dishes.
